Our MenuThis is a delicious dish of deep-fried cassava, or yucca root, which is slightly sweet and quite chewy. The cassava is cut into wedges and then fried. Some people prefer to boil it. It can be served with pepescas (a small type of fish, which is fried), or with chicharrón (deep-fried pork cracklings, which are actually fried in their own oil). It may also be served with tomato sauce and curtido (fermented cabbage salad).
